Ingredients for 4 servings:
- 300 g white corn flour
- 3 onions
- 2 eggs
- 200 g bacon, streaky
- 1 can corn kernels
- 200 g butter
- 100 g cheese, e.g. Cheddar
- Salt
- pepper
- Fat, for the baking tray

South African cornmeal flatbreads
Preheat the oven to 175°C. Cook the white cornmeal (please only use this!) with 4 cups of water for about 15 minutes. Meanwhile, peel and finely dice the onions. Hard-boil the eggs, peel them, and finely dice them. Finely dice the bacon. Drain the corn in a sieve. Melt 2 tablespoons of butter in a pan and fry the bacon bits. Add the onions and sauté. Mix the cornmeal with the bacon bits, onions, eggs, corn kernels, and remaining butter, season with salt and pepper. Spread the mixture on a greased baking sheet. Grate the cheese and sprinkle it evenly over the cornmeal. Bake in the preheated oven at 175°C for about 10 minutes, until the surface is golden brown. Cut into diamonds or triangles before serving. Note: Eggs, bacon, corn kernels, and cheese are interchangeable. You can replace them with mushrooms and diced ham, leeks and apples, smoked fish and chili cubes, for example. Boere Pap can replace bread or potatoes, for example, and can also be served at a barbecue.
