Hearty wild garlic rösti with ham

Ingredients for 3 servings:

  • 500 g potatoes
  • 2 eggs
  • 1 handful of wild garlic, fresh
  • 200 g ham or hunting sausage
  • 1 large onion(s)
  • 1 pinch(s) of salt and pepper
  • 2 tbsp flour
  • Oil, as needed for frying
  • possibly nutmeg
  • possibly caraway

Instructions

Working time approx. 45 minutes; Total time approx. 45 minutes

Peel the potatoes and grate them coarsely. Peel the onion and dice them finely. Add the ham, or alternatively, beer ham or sausage. Lightly fry the ham beforehand. Wash and roughly chop the wild garlic. Place everything in a bowl and mix, then add the two eggs and thicken with the flour. Don’t forget to season with salt and pepper. If you like, you can also add nutmeg or caraway seeds. Add oil to the pan and scatter small mounds of the garlic in the hot oil. Fry everything until golden brown on both sides and, if desired, serve with ketchup.
