Ingredients for 4 servings:
- 750 g potatoes
- 80 g bacon, streaky
- 3 eggs
- 3 tbsp milk
- Salt
- 125 g ham, diced
- 2 tomatoes
- ½ bunch chives
Instructions
Working time approx. 40 minutes; Total time approx. 40 minutes
Wash the potatoes and boil them in their skins for 30 minutes. Rinse with cold water. Peel them, let them cool, and slice them. Finely dice the bacon and fry in a pan. Add the potatoes, salt them, and fry until light brown. Whisk the eggs with the milk and salt. Add the diced ham, peel the tomatoes, cut them into eighths, and mix them with the egg mixture. Pour the mixture over the potatoes. The farmer’s breakfast is done when the egg mixture has set. Finely chop the chives, sprinkle them over the top, and serve immediately. Enjoy!
