  • 3 eggs
  • 1 egg yolk
  • 500 g jacket potatoes
  • olive oil
  • 2 tbsp milk
  • salt and pepper
  • chives
  • 1 onion(s)

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

slight variation of my grandma’s recipe

Peel the boiled potatoes and slice them. Dice the onion and fry in oil. Add the potato slices, season with salt and pepper, and fry until light brown. Whisk the eggs and egg yolk with the milk and chopped chives and stir into the roasted potatoes. Don’t let the mixture get too hard, but keep it nice and moist. It’s quick and very filling.
