Farmer’s Breakfast with Schinkenkrakauer

Ingredients
 

  • 6 Jacket potatoes from the previous day
  • 2 size Diced onions
  • 250 g Krakow ham sausage
  • 1 tablespoon Oil
  • 3 small Gherkins
  • 5 Eggs
  • 3 tablespoon Soda
  • Black pepper from the mill
  • Salt
  • 1 Cuffs Parsley
  • 30 g Butter
  • 50 g Ham cubes

Instructions
 

  • Peel the potatoes and cut them into slices. Finely dice the onions, Krakauer and pickles and chop the parsley. Briefly fry the Krakauer cubes in the heated oil and put them in a small container together with half of the onions.
  • Break open the eggs and add the cucumber cubes and about three tablespoons of soda; season with pepper and salt and stick everything through vigorously with the help of a fork.
  • Melt the butter in a large pan, add the potatoes, sprinkle with the diced ham and fry until the potatoes brown a little; then turn and sprinkle with the remaining diced onions; continue to fry until everything has turned an appetizing color.
  • Now add the egg mixture. Continue frying, using a wooden spoon to keep pushing the egg all the way from the edge to the center until it is nice and chunky and still juicy. Serve the finished farmer's breakfast sprinkled with fresh parsley. I added a little tomato garnish (the eyes want something too, don't they?).
