Farmer’s Breakfast with Tomatoes
The perfect farmer’s breakfast with tomatoes recipe with a picture and simple step-by-step instructions.
- 500 g Jacket potatoes
- 100 g Smoked bacon streaked
- 100 g Fresh onion
- 1 bunch Chives fresh
- 5 piece Free range eggs
- 5 tbsp Water
- 3 piece Tomatoes
- Salt and pepper
- Peel the onions. Cut the onions and bacon into cubes. Peel and roughly dice the potatoes. Cut the chives into small rings.
- Fry the bacon in a large pan over high heat until crispy and remove. Place the potatoes in the fat and only turn when the underside is browned. Then turn every now and then until they are really crispy. Add the onions. A little later then add the bacon again.
- In the meantime, stir the eggs with water, salt and pepper. Cut the tomatoes into slices.
- Pour the egg mixture over the potatoes and let it set over low heat. Place the tomatoes on top and sprinkle with chives.
