Farmer's omelette with wild garlic

Ingredients for 2 servings:

  • 4 m.-sized potatoes
  • 1 onion(s)
  • 4 eggs
  • some milk or cream
  • salt and pepper
  • 1 bunch of wild garlic
  • Oil, for frying

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Peel the potatoes and cut into small cubes. Peel and dice the onion. Heat the oil in a pan. Add the diced potatoes, making sure they don’t overlap. Wait a while before stirring so they start to brown (they won’t stick as quickly). Then add the diced onion and cook both until cooked through. Season generously with salt. In the meantime, beat the eggs with cream, salt, and pepper. Finely slice the wild garlic. Pour the egg wash over the potatoes, add half of the wild garlic, and cover. Simmer on low heat until simmering. To serve, add the remaining wild garlic strips to the omelet.
