Farmer’s Pancakes with Herb Quark

Peasant pancakes

Herb quark

  • 250 g Cream quark 40%
  • 2 tbsp Milk
  • Salt, gourmet pepper to taste
  • Herbs from our own garden (wild garlic, Andean garlic, spiced thyme)
  • 1 Garlic clove pressed
  • 1 tsp *Bärlauch – Pesto

Peasant pancakes

  • 500 g Potatoes (leftovers) that had to go
  • 1 Shallot
  • Bacon strips (leftovers) to taste
  • Parsley to taste

Herb quark

  1. Put the cream quark in a bowl and mix with a little milk. Season with salt and gourmet pepper, season to taste. The picked herbs from the garden, clean and chop. Then stir together with the wild garlic pesto. Before giving on the flowers.

Peasant pancakes

  1. Peel and dice the potatoes. Also peel the shallot and place in a lightning chopper, chop. Take a large pan and heat the rapeseed oil in it. Then put both in together and stir-fry for about a quarter of an hour, seasoning with salt and gourmet pepper.
  2. Leave out the bacon strips, stir in the chopped parsley. Put the eggs in a tall container, whisk. Season this with salt and gourmet pepper. Then pour over the potatoes & Co. and cover and let stand for about 20 minutes. Then take two flat plates and serve with the herb quark and cucumber salad.
