Farmer's pot with feta à la Nadine

Ingredients for 8 servings:

  • 2 kg potatoes
  • 1 ½ kg bell pepper(s)
  • 500 g minced meat, mixed or beef
  • 2 liters of instant vegetable broth, strong
  • 2 tubes of tomato paste
  • 2 large onions
  • 4 garlic cloves
  • 4 tsp marjoram, dried
  • 4 tsp thyme, dried
  • 2 tsp paprika powder, hot
  • n. B. Caraway
  • some oil for frying
  • 2 tbsp sugar
  • e.g. salt and pepper
  • 250 g feta cheese

Instructions

Working time approx. 40 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour

Peel and wash the potatoes, and cut them into 1 cm cubes. Cook the diced potatoes in salted water until al dente. Meanwhile, finely chop the onions and garlic. Wash the bell peppers and also dice them about 1 cm. Heat the oil in a large pot and fry the onions and garlic. Add the minced meat and increase the heat. Fry the minced meat until crumbly. Add the tomato paste and sugar and sauté for about 2 minutes. Add the diced bell peppers and sauté everything. Pour in the strong vegetable stock. Add the marjoram, thyme, and paprika. Season with pepper, salt, and caraway to taste. After 5 minutes of cooking, add the drained potatoes. Crumble the feta cheese and add it after another 5 minutes. Simmer for another 5 minutes and season to taste before serving.
