Quick dessert with few ingredients: 3 ingredient ice cream cake

The visit is coming up in half an hour and you don’t have any baking ingredients at home, apart from flour and baking powder: don’t worry, all is not lost yet. Together with ice cream, you can conjure up a quick dessert with a few ingredients. You need a loaf pan (25 cm) for this.

  1. Ingredients: 200 g flour, 1 ½ tsp baking powder, 475 ml “Cookies” ice cream (or another flavor of your choice)
  2. Preparation: Melt the ice cream in a saucepan on the stove over low heat.
  3. In a mixing bowl, whisk together the ice cream, flour, and baking powder to form a batter. Then pour the dough into a greased loaf pan.
  4. Bake the ice cream cake in the preheated oven on the middle rack at 180 °C for 25 minutes.

Chocolate cake with a liquid core

If you have the usual baking ingredients and a bar of dark chocolate at home, chocolate cakes with a liquid center are ideal as a quick dessert. You will need a muffin tin for the recipe.

  1. Ingredients for 6 chocolate cakes: 200 g dark chocolate (at least 50% cocoa content), 100 g sugar, 1 tablespoon flour, 3 eggs (size M), 50 g butter
  2. Preparation: Break 60 g of the dark chocolate into 6 equal pieces. The chocolate pieces will later provide the liquid core inside the cake.
  3. Melt the remaining chocolate along with the butter over a water bath on the stove.
  4. Beat eggs and sugar in a mixing bowl until fluffy. Then stir in the flour. Now mix the batter with the melted chocolate and butter.
  5. Fill 6 greased wells in your muffin tin one-third full with batter. Divide the prepared chocolate chips among the molds. Fill in the bulges evenly with the remaining batter.
  6. Bake the chocolate cakes in the preheated oven on the middle shelf at 180 °C for 10 minutes.

Yogurt cake with lemon icing

With this simple recipe, you can safely mix all the ingredients together at once. This saves you even more time during preparation. Place the dough in a 20cm springform pan and bake in the oven for 25 minutes. Optionally garnish the cake with a delicious lemon glaze.

  1. Ingredients: 125 g yogurt (3.8%), 300 g flour, 250 g sugar, 3 eggs (size M), 60 ml sunflower oil, 2 tsp baking powder, a pinch of salt
  2. Preparation: Put all the ingredients in a mixing bowl. Mix the ingredients with the hand mixer to a smooth dough.
  3. Pour the cake batter into a greased springform pan.
  4. Bake the yogurt cake in the preheated oven on the middle shelf at 200 °C for 25 minutes.
  5. Tip – Quick lemon icing: If you still have some time before your guests come, put homemade lemon icing on the yogurt cake. Mix the powdered sugar with the lemon juice in a bowl so that no lumps remain. Cover the cooled cake with lemon frosting.
