Ingredients for 4 servings:
- ½ liter of water
- 3 tomatoes
- 1 potato(s)
- Salt
- pepper
- nutmeg
- 3 tsp thyme or oregano
- 3 tbsp tomato paste
Instructions
Working time approx. 6 minutes; Total time approx. 6 minutes
Heat the water in a small saucepan. Remove the stems from the tomatoes and peel the potatoes. Add the tomatoes and potatoes to the boiling water and cook until soft, then remove from the heat. Drain three-quarters of the water, leaving the tomatoes and potatoes out. Purée the soft vegetables very finely with a hand blender, add the herbs (thyme, oregano) and tomato paste, and bring back to a boil. Season with salt, pepper, and nutmeg.
