Favorite potato salad

Ingredients for 4 servings:

  • 1 kg potatoes
  • 100 ml broth (approximately, depends on the potato variety)
  • 2 tbsp mayonnaise (approximately)
  • 3 gherkins
  • 1 onion(s)
  • pepper
  • possibly cucumber juice

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Boil the potatoes in their jacket potatoes. Make a very salty broth (so you wouldn’t want to eat them just like that). Dice the onion and add it when the broth has stopped boiling. Rinse the potatoes in cold water, peel and slice them, then add them to the broth and spread the mayo over them. It’s hard to specify quantities because I do it purely by feel. The sauce should be a bit too runny to begin with, as the potatoes will still absorb the sauce well. Let the salad marinate. Finally, sprinkle on the chopped cucumber and season with pepper (the broth should make it salty enough). I sometimes add a splash of the cucumber juice, but that’s really a matter of taste.
