Ingredients for 8 servings:
- 2 kg potatoes, waxy, small
- 1 tsp caraway seeds
- 2 tsp salt
- 400 g smoked bacon, streaky
- 3 large onions
- ½ tsp salt
- 1 tsp pepper
- 1 tsp Maggi
- 1 tsp vinegar essence
- 2 tbsp olive oil
- 1 tsp mustard, medium hot
- 1 tbsp stock powder
- 200 ml water
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes
Cover the potatoes with caraway seeds and 2 teaspoons of salt in water and cook for about 20 minutes. Rinse the potatoes, let them cool, peel them and cut them into small slices. Dice the bacon and fry them in a pan. Then dice the onions and continue to sauté with the bacon, but DO NOT let them brown. Pour this mixture over the potato slices, swirl the pan with about 200 ml of water and 1 tablespoon of granulated stock and also pour it over the potatoes. Season with medium-hot mustard, Maggi, salt, vinegar essence, pepper and olive oil and mix well. If desired, add a little more of the spices mentioned above. Traditionally, we always have this potato salad with Bockwurst at midnight on New Year’s Eve.
