I’d like to share the recipe for my favorite salad with you. It’s quick to prepare, fruity and fresh, crunchy, and keeps well in the fridge for a good three days. Put the mixed greens in a bowl. Cut the cheese into small pieces and add them. Peel and core 1 or 2 pears and add them to the bowl. Pour olive oil over them (the amount simply depends on your taste) and mix. Now toast the pine nuts in a pan without oil until browned. If you like, you can toast some sesame seeds with them. Toasting goes quite quickly if you have the stove on high. Scatter the nuts over the salad. Drizzle with a generous amount of balsamic vinegar, but don’t overpower the salad. Finally, season to taste with mixed pepper (freshly ground) and mix everything together again. I recommend letting the salad sit for a while, but it’s not necessary.
