Ingredients for 1 servings:
- 300 g low-fat curd cheese
- 4 eggs
- ¾ cup water
- 100 g flaxseed, crushed
- 100 g almond flour, alternatively ground almonds
- 5 tbsp spelt bran or wheat bran
- tbsp, sifted psyllium
- 1 packet of dry yeast
- ½ tsp salt
- some spice(s) (anise, caraway, etc.)
- some seeds or kernels

a light, low-calorie, low-carbohydrate bread
Combine low-fat quark, eggs, flaxseed, almond flour, bran, psyllium husks, salt, spices, and some of the water with the mixing bowl. Add the yeast and the rest of the water and mix. Cover and let rest for about 1 hour until the dough has risen. Pour the dough into a lightly oiled loaf pan and sprinkle with seeds or kernels, if desired. Let rest for another 5-10 minutes. In the meantime, set the oven to 150 degrees Celsius and, once heated, bake the bread on the middle rack for about 90 minutes. Note from Chefkoch.de: Because flaxseed contains a relatively high amount of cadmium, the German Federal Center for Nutrition recommends consuming no more than 20 g of flaxseed per day. Your daily bread consumption should be adjusted accordingly.
