Mixed salad with mango wedges and bacon and feta parcels

Ingredients for 2 servings:

  • ½ head of iceberg lettuce (or any other green salad)
  • 4 mushrooms, fresh
  • ½ can corn
  • 2 large tomatoes
  • ½ mango(s)
  • 125 g feta cheese
  • 8 slices of bacon
  • 2 tbsp olive oil
  • Herbs of Provence
  • salt and pepper

Working time approx. 20 minutes; Total time approx. 20 minutes

an extraordinary taste experience

Wash the lettuce, spin dry, and cut into strips. Trim and slice the mushrooms and tomatoes. Peel the mango, remove the pit, and cut into wedges. Cut the feta into eight cubes. Roll each cube in a slice of bacon and secure the bacon with toothpicks. Sear on all sides in a hot pan until the bacon is nice and crispy. Mix the salad with the mushrooms, corn, and tomatoes and arrange on two plates, placing the mango wedges around the edges. Mix the oil with salt, pepper, and herbs, and drizzle over the salad. Place the feta parcels on top.
