Feta chicken with mountain herbs

Ingredients for 4 servings:

  • 8 chicken breast fillets
  • Thyme, rosemary and oregano, freshly chopped
  • 150 g feta cheese
  • 1 tbsp milk
  • salt and pepper
  • 2 tbsp flour
  • 1 onion(s), coarsely chopped
  • 1 garlic clove(s), crushed
  • 1 tbsp olive oil
  • 4 m.-sized tomatoes
  • Thyme, rosemary and oregano
  • salt and pepper

Instructions

Working time approx. 35 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 5 minutes

Cut open the chicken fillets and unfold. Cut the feta into 8 slices. Sprinkle the meat with the herbs, season with salt and pepper, and top each with a slice of feta. Fold the meat shut and pin it securely. Place the meat in a baking dish, brush with milk, and sprinkle with flour. Preheat the oven to 200°C and bake the fillets for 25-30 minutes until golden brown. For the tomato sauce, sauté the onion and garlic in olive oil. Add the tomatoes, cover, and simmer for 15-20 minutes until the tomatoes are tender. Add the herbs and puree the sauce in a blender until smooth, then pass through a sieve and season with salt and pepper. Serve the meat with the sauce.
