Ingredients for 4 servings:
- 200 g rice, cooked in salted water until al dente
- 250 g minced meat
- 1 tbsp butter or margarine
- Pepper, paprika powder, curry, Tabasco
- 1 onion(s)
- 3 tbsp tomato paste
- 1 can kidney beans
- 1 can of corn (425 ml)
- 200 g cream
- 1 tsp cornstarch
- 200 g cheese, grated
- Fat, for the shape
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Cook rice according to package instructions until al dente. Brown minced meat in hot butter or margarine. Season with salt, pepper, paprika, and curry powder. Peel and dice the onion, and add it. Stir in tomato paste and season with Tabasco. Drain the rice and rinse well. Rinse the kidney beans, mix them with the corn and minced meat, then add to the rice and place in a greased casserole dish. Mix the cream with salt, pepper, and cornstarch, pour over the casserole, and sprinkle with cheese. Bake the casserole in a preheated oven at 200°C (180°C fan-assisted oven) for about 30 minutes.
