Fig and honey galette

Ingredients for 1 servings:

  • 175 g flour
  • 113 g butter, soft
  • 60 g water, cold
  • 1 tsp sugar
  • 1 pinch of salt
  • 4 figs
  • 125 g cream cheese, room temperature
  • 55 g honey
  • 1 egg yolk for brushing

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 45 minutes

Make a dough from the first 5 ingredients and place in the refrigerator for at least 1 hour. Preheat the oven to 200°C (top/bottom heat). Cut the figs into slices about 1-1.5 cm thick. For the filling, mix the honey and cream cheese together. Roll out the dough into a circle on a baking sheet lined with baking paper. You can also press the dough into the correct shape with your hands, about 26-30 cm in diameter. Spread the cream cheese mixture over the dough, leaving a border about 3 cm wide all around. Then spread the figs over the filling. Fold over the edge and press down lightly. Brush the edge of the galette with egg yolk and bake on the middle rack for about 25-30 minutes. Please keep in mind that every oven is different and the baking time may vary. For example, mine only took 20 minutes. It’s best to check the galette every now and then. The galette tastes great combined with vanilla ice cream.
