Ingredients for 1 servings:

  • 500 g fig(s), dried
  • 200 ml port wine, red
  • 200 ml red wine
  • 100 ml red wine vinegar
  • 2 lemons, juice
  • 125 g brown sugar
  • 100 g Dijon mustard
  • ¼ tsp salt
  • Pepper, from the mill

Instructions

Working time approx. 30 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 20 minutes; Total time approx. 2 hours 50 minutes

Cut each fig into six pieces. Add the port wine, red wine, vinegar, and lemon juice, and soak for one to two hours. Add the remaining ingredients and bring to a boil in a large saucepan. Cook until the figs are soft. Stir well, as they are very thick and likely to burn. Pour into twist-off jars while still very hot and let cool. Tastes great with cheese, but also with roast beef, roast beef, etc.
