Fig foam

Spread the love

Ingredients for 1 servings:

  • 160 g fig(s), dried
  • 160 g almonds, in sticks
  • 2 egg whites
  • 120 g powdered sugar
  • 40 wafers (5cm diameter)

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Finely dice the figs, then lightly brown them with the almond slivers in a pan over medium heat, stirring constantly. Let cool. Beat the egg whites until very stiff for about 15 minutes, while gradually adding the sifted powdered sugar. Briefly fold in the figs and almonds. Using 2 teaspoons, place small mounds of dough on the wafers. Bake in the oven (160-170°C, fan oven 140-150°C) for about 25 minutes, but they should only be very lightly browned. Once cooled, layer them in a container and store tightly sealed. It’s best to make double (or triple) the batch. These delicious things “evaporate” very quickly!
