Filet – Mushroom Sandwiches

Ingredients
 

The sauce

  • 500 g Fresh mushrooms
  • 250 g Diced Bacon
  • 2 Onions
  • 1 cup Crème fraîche with herbs
  • 100 ml Semi-Dry white wine
  • Curry, sweet paprika, pepper, garlic
  • Leaf parsley finely chopped
  • Oil for frying

The fllet & the marinade

  • 400 g Pork tenderloin
  • 1 Chili peppers finely chopped
  • 0,5 Garlic clove peeled and bumped
  • Native olive oil, honey, curry, sweet paprika
  • 1 bunch Leaf parsley
  • 5 Peppercorns
  • 2 slices Mixed rye bread fresh from the bakery

Instructions
 

  • First, the fillet is washed, patted dry with a kitchen towel and the silver skin removed. Then cut into medallions of the same size and make a marinade from the ingredients mentioned (except the bread;)) and put the meat in it to rest. The minimum marinating time should not be less than 4 hours.
  • It continues with the mushroom sauce. Clean the mushrooms and cut into slices .. Peel and finely dice the onions. Sear the mushrooms in a really hot pan without oil and set aside. Fry the onions and the bacon and add the mushrooms and mix everything together. Deglaze with the white wine. The rest of the white wine goes well with the meal;) Season with the above mentioned spices and keep warm.
  • We come back to the fillet. Let the pan get hot, use 2 tablespoons of the marinade for frying. It is important that neither the chilli pepper, the flat parsley nor the garlic is fried! Now let the medallions sizzle until the desired tan. In the oven preheated to 175 ° C, in a casserole dish covered with aluminum foil, to the perfect cooking point (the meat should still be slightly pink in the middle). The resulting roast set is poured over the bread slices and these are then sprinkled with finely chopped leaf parsley. Cut medallions into thin strips and add to the warm sauce. Now place the whole thing generously on the bread slices and decorate with the leaf parsley.
  • This delicious meal is easy to prepare, e.g. when you are expecting guests. It was very well received by my parents 🙂 Superkochhasi wishes you a good appetite.
