Filet toast "Lumberjack"

Ingredients for 1 servings:

  • 2 slices of toast (wholemeal toast)
  • 4 slices of pork fillet(s) approx. 1-1.5 cm thick (total 150-180 g fillet)
  • 4 slices herb butter
  • 1 onion(s), finely diced
  • 30 g bacon, diced, smoked
  • Clarified butter, or oil for frying
  • salt and pepper
  • leaf lettuce

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

with bacon and onions

Brown diced onions in a pan with a little clarified butter, add bacon, and cook for a bit longer. Heat a grill pan and grease it with a little oil. Season the pork fillet slices with salt and pepper, and cook on both sides until the fillets are cooked to your liking. Meanwhile, toast the toast, place it on a plate, and arrange the washed lettuce leaves on top, generously covering the slices. Now place the fried fillet pieces on top and place a slice of herb butter on each piece. Sprinkle the toasted bacon and onion cubes over the top and season with freshly ground pepper.
