Ingredients for 1 servings:

  • 500 g flour
  • 250 g pumpkin(s), fresh, alternatively sweet and sour pickled, from the jar
  • 1 packet of yeast (dry yeast)
  • 2 orange(s), juice and grated peel
  • 20 ml port wine
  • 1 pinch of salt
  • 3 tbsp pumpkin seed oil, alternatively sunflower oil
  • Fat, for frying
  • powdered sugar
  • Cinnamon
  • possibly water

Instructions

Working time approx. 45 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 45 minutes

Pumpkin donuts

Boil the pumpkin in water until soft (drain any pieces from the jar) and puree. Mix the flour, pumpkin puree, dried yeast, and grated orange zest in a bowl. Add the orange juice, port wine, salt, and pumpkin seed oil. Knead into a smooth dough. If the dough is too thick, add a little lukewarm water. Cover and let rise in a warm place. Knead the dough again briefly, roll out thinly, and cut out any desired shapes. Let each piece rise again. Heat the frying oil. Using a slotted spoon, slide each piece of dough into the hot oil and fry until golden brown. Turn over once. Drain on kitchen paper. Mix the powdered sugar and cinnamon together and dust the filhos with this. Makes about 20 pieces.
