Filled Bread or Rolls

Bread / rolls

  • 250 g Wheat flour type 550
  • 60 ml Milk
  • 10 g Yeast, fresh
  • 1 tsp Sugar
  • 30 g Natural sourdough
  • 1 Pc. Egg yolk
  • 1 tsp Maple syrup
  • 20 g Butter, soft
  • 1 tsp Salt

Leberkäse filling

  • 1 Pc. Parika, red
  • 400 g Meatloaf
  • 0,5 bunch Chives
  • Oil
  • 30 g Butter
  • 20 g Flour
  • 200 ml Broth (vegetable or chicken broth)
  • 100 ml Milk
  • Salt and pepper
  1. If you don’t want to bake the bread or rolls yourself, you can of course take ready-made ones from the bakery. This saves a lot of time and the dish is ready in about 30 minutes. The main ingredients (paprika / Leberköse) of the filling can also be replaced at will, be creative :). By the way, it also tastes great cold and can also be taken to a picnic.

Bake the bread

  1. Sift the flour into a bowl and then make a well in the middle. Add 3 tablespoons of water to the milk (lukewarm) and then dissolve the sugar and the crumbled yeast in it. Pour this mixture into the flour trough and dust with flour from the edge. Let this dough rise for about 15 minutes.
  2. Add the remaining ingredients (egg yolk, syrup, salt, butter, sourdough) and knead everything into a smooth, supple dough. Cover again and let rise for 2 hours.
  3. Divide the dough into portions and knead on a floured surface and shape into balls. Dust them again lightly with flour and cover again for 1 hour.
  4. Preheat the oven to 220 ° C (fan oven). Put the loaves in the oven on a baking tray lined with baking paper. Pour approx. 250ml of water onto the bottom of the oven and close the door immediately. You should see light clouds of steam in the oven. Then reduce the temperature to 180 ° C and bake the bread for about 35 minutes. Take out and let cool down.

The filling

  1. Clean the parika and cut into strips or pieces. Cut the meat loaf into strips or pieces. Fry both vigorously in a pan with oil and then remove. In the meantime, cut the chives into rolls.
  2. Now heat about 20g butter in the same pan with the rest of the frying oil. Sweat the flour in it, deglaze with the stock and milk. Let everything simmer so that a creamy, almost pulpy sauce is created. Stir approx. 3/4 of the chives rolls into the sauce. Then add the meatloaf and paprika mix and mix well, season with salt and pepper.
  3. Cut the lids off the bread and hollow out the inside, save the inside. Now put the filling in the bread and place on a lined baking sheet. Then bake them in the preheated oven at 180 ° C for 15 minutes. Meanwhile, roast the inside of the bread in a pan with approx. 10g butter until golden brown.
  4. Sprinkle the finished bread with the remaining chives and serve with the inside of the bread. Good Appetite.
