- 1 ½ tsp baking soda

- 120 g butter
- 4 egg yolks
- 2 tbsp brandy
Instructions
Working time approx. 1 hour; Total time approx. 1 hour
with chocolate filling and creamy chocolate icing
Grease two 26 cm springform pans and line the bottoms with baking paper. For the batter, melt 90 g of chocolate coating. Cream the 175 g butter with the brown sugar until fluffy, then add the two eggs one at a time. Stir the melted chocolate into the boiling water, let it cool slightly, and then mix it all together with the butter and sugar mixture until creamy. Then gradually sift in the flour mixed with the baking soda and baking powder, adding the sour cream and vanilla extract a few times until all the ingredients are smooth. Divide the batter evenly between the two baking pans and bake one after the other in an oven preheated to 190°C (top and bottom heat) for about 25 minutes. Let it cool in the pans first, then turn it out onto two wire racks. During baking, you can prepare the creamy glaze/filling: Break the 350g of chocolate coating into pieces and gently heat it with the cream in a small saucepan until liquid. Allow the mixture to cool slightly, then gradually stir in the 120g of cubed butter. Finally, stir in the 4 egg yolks and the brandy until you have a smooth, creamy mixture. If the mixture is too runny, you can refrigerate it for a while until it is easy to spread. Spread some of the chocolate cream on the first cooled layer, then carefully place the second layer on top. Cover the cake on all sides with the remaining cream. Decorate the finished chocolate cake with powdered sugar, if desired. This cake is delicious as a dessert with liquid cream or with red fruit compote and vanilla ice cream. But it is also a light and moist treat on its own.
