Filled puff pastry with halibut and vegetables

Ingredients for 4 servings:

  • 1 pack of puff pastry
  • 250 g fish fillet(s) (halibut)
  • 4 large broccoli, cut into florets
  • 2 large carrots
  • 125 ml whipped cream
  • 2 eggs
  • 2 tsp crème fraîche
  • 50 g cheese (Gouda or similar), grated
  • some olive oil for frying
  • e.g. salt and pepper

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 50 minutes

Puff pastry filled with halibut, broccoli and carrots

Cut the puff pastry into 4 equal pieces. Fry the halibut fillets in a little olive oil for about 2 minutes on each side and season with salt and pepper. Cut the carrots into small strips and cook them with the broccoli in hot, salted water until al dente. Cut the broccoli florets into small pieces. For the sauce, mix an egg with the heavy cream in a bowl. Stir in 2 teaspoons of crème fraîche and season with salt and pepper. Finally, add the grated cheese. Place one piece of halibut fillet on each piece of puff pastry. Arrange the broccoli florets and carrot strips on top. Now spoon about 2-3 tablespoons of the mixed sauce onto each piece of puff pastry and seal. Separate the second egg and brush the puff pastry pieces with the egg yolk. Bake in a preheated oven at 180°C (160°C fan-assisted oven) for about 25 minutes until golden brown.
