Fillet of Beef Cooked in Oven
The perfect fillet of beef cooked in oven recipe with a picture and simple step-by-step instructions.
- 800 g Beef fillet
- 3 tbsp Clarified butter
- 1 Clove of garlic
- 0,5 tsp Paprika powder
- 1 tsp Pepper
- 0,5 tsp Allspice, ground
- 2 Branches Rosemary
- 2 Branches Thyme
- 1 pinch Salt
- Wash the rosemary and thyme and shake dry.
- Peel the garlic and cut in half.
- Tie the beef fillet with kitchen twine.
- Heat the butter lard in a pan and sear the fillet on each side for approx. 4 – 5 minutes.
- In the last 2 minutes, add the sprigs of herbs and garlic, fry briefly so that the aromas unfold.
- Pour the frying stock and herbs over the fillet.
- Then rub the fillet with pepper, salt and paprika powder and place in an ovenproof dish.
- Cook everything in the oven at 80 ° (top / bottom heat) for about 120 minutes until the core temperature of 55 degrees is reached.
- Please measure with a kitchen thermometer.
- Finally, take the cooked beef fillet out of the oven, let it rest a little, cut into slices and serve immediately.
