Fillet of Beef Cooked in Oven

The perfect fillet of beef cooked in oven recipe with a picture and simple step-by-step instructions.

  • 800 g Beef fillet
  • 3 tbsp Clarified butter
  • 1 Clove of garlic
  • 0,5 tsp Paprika powder
  • 1 tsp Pepper
  • 0,5 tsp Allspice, ground
  • 2 Branches Rosemary
  • 2 Branches Thyme
  • 1 pinch Salt
  1. Wash the rosemary and thyme and shake dry.
  2. Peel the garlic and cut in half.
  3. Tie the beef fillet with kitchen twine.
  4. Heat the butter lard in a pan and sear the fillet on each side for approx. 4 – 5 minutes.
  5. In the last 2 minutes, add the sprigs of herbs and garlic, fry briefly so that the aromas unfold.
  6. Pour the frying stock and herbs over the fillet.
  7. Then rub the fillet with pepper, salt and paprika powder and place in an ovenproof dish.
  8. Cook everything in the oven at 80 ° (top / bottom heat) for about 120 minutes until the core temperature of 55 degrees is reached.
  9. Please measure with a kitchen thermometer.
  10. Finally, take the cooked beef fillet out of the oven, let it rest a little, cut into slices and serve immediately.
