Fillet of Beef on Fried Asparagus
The perfect fillet of beef on fried asparagus recipe with a picture and simple step-by-step instructions.
- 400 g Beef fillet
- 500 g Asparagus green fresh
- 500 g Asparagus white fresh
- 2 medium-sized Carrots
- 3 piece Spring onion
- 4 tbsp Olive oil
- 2 tbsp Soy sauce
- 2 tbsp Teriyaki sauce
- 1 tbsp Sesame seeds white
- First, heat the oven to 90 ° C (fan oven), then place the steaks (each cut to 200g of your choice) unseasoned and raw (!) On the grid (center), depending on your taste for between 30 and 60 minutes in the Put in the oven, medium is reached after approx. 40 minutes. After staying in the oven, take the meat out of the oven (the meat dries on the surface, which does not damage the meat) and season with salt and pepper, rub with olive oil and sear in a hot pan for only 1 minute per side, briefly before the end, add a piece of butter and, if necessary, thyme or other herbs and use it to flavor the meat!
- While the steak is in the oven, peel the white asparagus and cut off the ends, peel only the lower part of the green asparagus and cut off the ends too. Then cut the asparagus into pieces about 5cm long. Clean and peel the carrots and cut into narrow strips. Cut the onion into rings. Roast the sesame seeds in a pan without oil until golden-brown and at the end add them to the fried asparagus. Sear the asparagus and carrots in olive oil and season with salt, pepper and a pinch of sugar, if necessary in stages, then add the spring onions and deglaze with soy sauce and teriyaki.
- Arrange the fried vegetables in the middle of a plate and place the fillet on top. Enjoy your meal! Ps: If you wish, you can boil the asparagus peels and sections in salt water (with 1 teaspoon of sugar and a little vinegar). I made a nice cream of asparagus soup out of it,
