Fillet of horse on a bed of vegetables with fried potato cubes

Ingredients for 4 servings:

  • 800 g fillet(s) of horse
  • 600 g frozen vegetables (stir-fried vegetables)
  • 1 kg potatoes
  • 2 tsp sauce (ketjap manis)
  • 4 tbsp oil (peanut oil)
  • 2 tsp chili-garlic spice
  • 2 tsp seasoning mix (chip salt)

Season the fillet all over with chili and garlic in a non-stick pan and sear on all sides. Place the fillet in a baking dish and keep warm in the oven at around 70 degrees Celsius. Peel the potatoes, slice them, cut them into sticks, and then dice them. Add a little peanut oil to the pan in which the fillet was previously fried and fry the diced potatoes until golden brown. This takes around 20 minutes at medium heat. Season with potato salt. Place the frozen vegetables in a baking dish and drizzle with ketjap manis. Place in the oven at 160 degrees Celsius for around 10 minutes. After 10 minutes, slice the fillet, place it on top of the vegetables for another 10 minutes, and reduce the heat to 100 degrees Celsius.
