Ingredients for 8 servings:
- 2 kg chicken breast fillet(s) or pork fillet
- 3 packs of tomatoes, pureed or chopped or 1 kg fresh
- 2 ½ cans of tomato paste, double concentrated
- 1 liter of whipped cream
- 3 tbsp olive oil
- 3 points raw ham, sliced
- 1 tsp chili, freshly chopped
- 1 tsp salt
- 1 tsp black pepper
- 1 tbsp basil, dried
- 1 tbsp rosemary
- 1 tbsp thyme
- 2 tsp sugar
- 6 cloves garlic, finely chopped
- 2 tbsp breadcrumbs
- 2 baguettes

Cut the fillet into fairly small pieces. Wrap each piece in a slice of ham and place them upright in a casserole dish or roasting pan, tightly packed together. Don’t crowd the pieces; the sauce should be able to run between them. The casserole dish/roasting pan should have high sides so there’s still room at the top, so the generous sauce will cover the pieces of meat completely! Preheat the oven to 200°C (fan oven) and place the oven rack at medium height. Gently heat the olive oil in a large pot, add the chopped garlic, sugar, and the remaining spices, and simmer gently in the hot oil until the herbs begin to release their aroma and the sugar develops a caramel note. Be careful with the chili; the dish should only have a slight basic heat. But that’s a matter of taste, of course. Remove the pot from the heat and add the pureed, chopped, or finely chopped fresh tomatoes. Stir well so the tomato sauce doesn’t splatter. Top up with the cream and return the pot to the stove at medium heat. Add the concentrated tomato paste and stir well to dissolve it. Season to taste. Pour the sauce, which should have a thick, creamy consistency, over the meat pieces, ensuring everything is well coated. Sprinkle with breadcrumbs. It looks simply delicious when the whole thing comes out of the oven, but you can also omit them. Bake at 200°C (fan oven) for half an hour. Serve with fresh, crusty baguette. The sauce is generous, so you have something nice to scoop up with the bread.
