Oven-baked chicken thighs

Ingredients for 2 servings:

  • 2 chicken legs
  • 4 potatoes
  • 2 carrots
  • 1 large onion(s)
  • 1 pinch of salt
  • pepper
  • oil

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour

Chop the vegetables and place them in a casserole dish. Season, adding fresh herbs if desired. Place the chicken thighs on top and season with salt. Drizzle a little oil over the thighs. Preheat the oven to 220°C (top/bottom heat) and then place the casserole dish uncovered in the oven for 45 minutes. Grill for the last 10 minutes for extra crispy skin.
