Fillet skewers with pumpkin

Ingredients for 2 servings:

  • 300 g pumpkin flesh (cleaned and pitted weighed) best suited is a firm-fleshed pumpkin, e.g.: Hokkaido
  • 300 g pork fillet(s)
  • 8 slices of bacon (breakfast bacon)
  • 6 stalk(s) spring onion(s)
  • 2 tbsp clarified butter
  • Salt
  • Cayenne pepper
  • Flour, for dusting

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Cut the pumpkin and fillet into equal-sized cubes about the thickness of your thumb. Halve the bacon slices; cut the spring onions into approximately 3 cm long pieces. Thread everything alternately onto skewers. Season with cayenne pepper and salt. Dust lightly with flour and fry in clarified butter over medium heat until cooked through.
