Fillet steak with Café de Paris sauce

Ingredients for 4 servings:

  • 800 g pork fillet(s) or beef fillet
  • 250 ml cream
  • 150 g butter
  • 2 tbsp Café de Paris (spice)
  • Clarified butter

Instructions

Working time approx. 35 minutes; Total time approx. 35 minutes

with spice mix

Mix the softened butter with the Café de Paris seasoning and chill. Whisk half of the cream until stiff. Cut the fillet into 4 steaks, each about 3 cm thick. Heat the clarified butter in a pan until very hot. Sear the steaks vigorously for about 1 minute on each side. Season with salt and pepper. Reduce the heat to medium. Then continue to sear for 3-4 minutes on each side. Cover the finished steaks and let them rest for about 5 minutes. Bring the remaining cream to a boil in the frying pan. Reduce the heat. Gradually whisk in the chilled butter in pieces. Fold the stiffly whipped cream into the sauce and season to taste. Plate up the fillet steaks and pour the hot Café de Paris sauce over them. Serve with French fries or hash browns and a green leaf salad.
