Beef fillet in cognac cream sauce

Ingredients for 4 servings:

  • 800 g beef fillet(s)
  • 4 tbsp oil
  • 200 g cream
  • 4 cl cognac
  • 1 tbsp peppercorns
  • Salt
  • pepper
  • Paprika powder

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Cut the beef fillet into thick slices and season with pepper, salt, and paprika. Heat oil in a pan. Fry the beef fillets in the pan for 3 minutes on each side if you prefer them rare. If you prefer them pink on the inside, wait until they are slightly sweating on each side. Remove the fillets from the pan. Deglaze the pan with cognac, add the cream, and simmer slightly. Stir in the peppercorns and season the sauce with salt.
