Filleting Oranges – That’s How it Works

For certain dishes and especially desserts you have to fillet oranges. We will explain how you can quickly and easily convert fruit into fillet pieces.

Haute cuisine: filleting oranges – it’s that easy

To fillet an orange, all you need is a sharp knife and a cutting mat.

  1. First, separate the top and bottom ends with a straight cut.
  2. Now cut off the peel from top to bottom. Since you only want to be left with the pulp, remove any white residue.
  3. To separate the individual pieces, cut near the membranes to the middle of the orange.
  4. After you have removed all the pieces, you can squeeze the remaining orange and use the juice as well.
