For certain dishes and especially desserts you have to fillet oranges. We will explain how you can quickly and easily convert fruit into fillet pieces.
Haute cuisine: filleting oranges – it’s that easy
To fillet an orange, all you need is a sharp knife and a cutting mat.
- First, separate the top and bottom ends with a straight cut.
- Now cut off the peel from top to bottom. Since you only want to be left with the pulp, remove any white residue.
- To separate the individual pieces, cut near the membranes to the middle of the orange.
- After you have removed all the pieces, you can squeeze the remaining orange and use the juice as well.
