Ingredients for 4 servings:

  • 4 rolls
  • 4 eggs
  • 1 shot of milk
  • ½ bunch leeks or spring onions
  • Salt
  • nutmeg
  • e.g. lettuce (head lettuce)
  • some clarified butter

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

quick food (also for vegetarians)

First, tear the rolls into small pieces and soak them in a splash of milk. Meanwhile, clean and finely chop the leek. Now squeeze the water out of the rolls and mix them with the leek, a little nutmeg, salt, and eggs. Then fry the whole thing on both sides in clarified butter (depending on the size of the pan), like an omelet. Prepare the lettuce as usual and serve with the side.
