Fine herring salad

Ingredients for 4 servings:

  • 8 fish fillets (herb matjes)
  • 2 apples
  • 1 large onion(s)
  • 3 m.-large gherkins
  • 150 g sour cream
  • 1 ½ lemon(s)
  • 40 g sugar
  • salt and pepper
  • Cayenne pepper
  • Juniper berry(s)
  • Dill, fresh or dried

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

with bread or boiled potatoes

Finely dice the apple, onion, and cucumber, then mix with the dill and juniper berries. Halve the herring lengthwise and cut into 1.5 cm pieces. Mix with the other ingredients. Combine the lemon juice with salt (depending on the saltiness of the herring), sugar, pepper, and cayenne pepper in a blender. Stir in the sour cream and mix everything with the herring. Let it sit overnight, if possible, and stir before serving.
