Ingredients for 4 servings:

  • 2 packs of salted herring (matjes or Bismark herring fillets)
  • 1 large onion(s)
  • 1 apple, sweet and sour
  • 1 small jar of pickled gherkins
  • 200 ml sweet cream
  • pepper
  • possibly salt

Instructions

Working time approx. 20 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 20 minutes

Herring stipp, without meat, according to grandmother’s, mother’s and my style

Pat the herring fillets dry with a paper towel, cut into small pieces, and place them in a bowl. Peel the onions, chop them into small cubes, and add them to the bowl. Grate the pickles and the apple coarsely into the bowl. Add the cream and season with pepper and salt, if desired. Mix everything thoroughly and let it marinate. It tastes best with boiled potatoes.
