Fine nut cookies

Ingredients for 1 servings:

  • 250 g flour (wheat flour)
  • 1 tsp baking powder, level
  • 150 g sugar
  • 1 packet of vanilla sugar
  • 3 drops of bitter almond flavor
  • 4 tbsp milk
  • 100 g butter
  • 200 g hazelnuts, finely ground
  • Hazelnuts, halved
  • Milk

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes

Sift flour and baking powder onto a baking board/tabletop. Make a well in the center and add the sugar, spices, and milk. Mix with some of the flour to form a thick paste. Add the cold butter, cut into pieces, and the hazelnuts and knead everything into a smooth dough. If it’s sticky, chill it for a while. Roll out the dough to about 3 mm thick and cut out round cookies. Place these on a baking sheet, brush with a little milk, and decorate with half a hazelnut kernel. Bake for 10-15 minutes at 175 degrees Celsius. Note: Due to the high proportion of dry ingredients, the dough tends to crumble a little. I have therefore shaped it into logs and cut into appropriately thick slices with a sharp knife.
