Fine turkey schnitzel

Ingredients for 4 servings:

  • 4 turkey schnitzels
  • e.g. salt and pepper
  • Rapeseed oil, for frying
  • 80 g Emmental cheese, grated
  • 50 g Emmental cheese, finely diced
  • 2 egg yolks
  • 4 tsp rum or brandy
  • 3 tbsp cream
  • 100 g walnuts, roughly chopped
  • Parsley, chopped for garnish

Working time approx. 20 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 25 minutes

Season the schnitzels with pepper and fry in rapeseed oil for about 2 minutes on each side. Season with salt and place on a preheated, ovenproof plate. Mix the grated cheese, egg yolks, cream, rum, and a pinch of salt until smooth. Add the cheese cubes and chopped walnuts and spread the mixture over the schnitzels. Bake in a preheated oven at 200°C (400°F) for about 5 minutes until crusted. Sprinkle with chopped parsley before serving.
