Fine wafer gingerbread

Ingredients for 1 servings:

  • 4 eggs
  • 200 g sugar
  • 1 tbsp vanilla sugar
  • 200 g hazelnuts, ground
  • 200 g ground almonds
  • 100 g candied lemon, finely chopped
  • 100 g candied orange peel, finely chopped
  • ½ pkt. gingerbread spice
  • Wafers, 7 cm diameter
  • possibly chocolate or icing

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

makes about 20 pieces

Combine all ingredients and spread onto the baking sheets using an ice cream scoop, pressing them slightly flat. This makes it easy to get even portions. Place on a baking sheet and bake in a preheated oven at 150-160°C (300-320°F) using conventional heat (do not use fan-assisted oven, as this will dry them out!) for about 25 minutes. They will still feel a little soft after baking. Let them cool and then cover with chocolate or a thin layer of icing. (Tip: Dust the candied lemon and orange peel with a little flour before chopping to prevent them from sticking.)
