  • 2 Butcher’S onion
  • 2 toes Garlic
  • 1 tube Tomato paste concentrated three times
  • 2 Tl Mustard seeds
  • 2 Tl Cumin
  • 1 Tl Fennel seeds
  • 1 Tl Long pepper
  • 1 Tl Szechuan pepper
  • 2 Tl Coriander seeds
  • 500 ml Cola
  • 800 g Tomato can
  • 2 El Sugar brown
  • 1 Chili
  • 2 El Sweet paprika powder
  • 2 El Honey liquid
  • 2 El Raspberry vinegar
  • 50 ml Worcester sauce
  • 50 ml Whiskey
  • 3 Tl Smoked salt
  1. Dice the onion and sauté in butter or lard, add the garlic briefly, then let the tomato paste brown slightly.
  2. Put all the spices in the mortar and crush them.
  3. Now add the tomatoes, cola and the spices, finely chop the chilli and add the vinegar, honey, smoked salt, sugar, Worcester sauce, stir everything well and simmer slowly for about 2 hours.
  4. Now puree everything with the magic wand and season to taste again, adding a little smoked salt if necessary.
