- 2 Butcher’S onion
- 2 toes Garlic
- 1 tube Tomato paste concentrated three times
- 2 Tl Mustard seeds
- 2 Tl Cumin
- 1 Tl Fennel seeds
- 1 Tl Long pepper
- 1 Tl Szechuan pepper
- 2 Tl Coriander seeds
- 500 ml Cola
- 800 g Tomato can
- 2 El Sugar brown
- 1 Chili
- 2 El Sweet paprika powder
- 2 El Honey liquid
- 2 El Raspberry vinegar
- 50 ml Worcester sauce
- 50 ml Whiskey
- 3 Tl Smoked salt
- Dice the onion and sauté in butter or lard, add the garlic briefly, then let the tomato paste brown slightly.
- Put all the spices in the mortar and crush them.
- Now add the tomatoes, cola and the spices, finely chop the chilli and add the vinegar, honey, smoked salt, sugar, Worcester sauce, stir everything well and simmer slowly for about 2 hours.
- Now puree everything with the magic wand and season to taste again, adding a little smoked salt if necessary.
