Ingredients for 4 servings:

  • 300 g flour
  • 2 eggs
  • 1 tsp, leveled salt
  • 100 g butter
  • 4 tbsp breadcrumbs
  • some flour for the work surface and for dusting

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes

Knead the flour, eggs, salt, and a little water with a dough hook; the dough should no longer be sticky. Add more flour if necessary (if the dough is too runny) or water (if it is too firm). Knead the medium-firm dough until it is completely smooth. Roll out on a lightly floured board to a thickness of about 2 mm (not too thin!) and cut into finger-length strips. Dust the cut strips with flour and do the same with the remaining dough. Bring salted water to a boil and add the pasta. It is ready when it floats to the surface. Then remove it from the water with a slotted spoon. Add a knob of butter to the skimmed pasta to prevent it from sticking together. Melt plenty of butter in a pan. Add the breadcrumbs as soon as the butter is brown and fry until golden brown, stirring constantly. Add the pasta all at once and fold it into the butter and breadcrumb mixture. Smells and tastes just like my grandma’s!
