Finnish raspberry foam

Ingredients for 8 servings:

  • 500 ml raspberries
  • 100 ml water
  • 1 liter of water
  • 150 ml semolina, fine
  • 150 ml sugar

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Puree the raspberries with 100 ml of water. Add the mixture to a large pot containing 1 liter of water and bring the mixture to a boil. Mix the semolina with the sugar. When the berries are boiling, reduce the heat and add the semolina and sugar mixture, stirring constantly. Bring the mixture back to a boil and then simmer on low heat for about 5 to 10 minutes. Remove the pot from the heat and let it cool in a water bath. When the mixture is lukewarm, beat vigorously with an electric mixer, as if making whipped cream. The dark red mixture will eventually turn pink and increase in size by almost half due to the air bubbles. Cool thoroughly and let it set. Traditionally, this foam is made with cranberries, but you can also make it with any other berries. My Finnish roommate told me that it is eaten with fresh whole milk.
