Ingredients for 1 servings:

  • 400 g fir branch(es), fir shoots, delicate light green – plucked from a fir tree in May
  • 1 liter of water
  • 1 lemon(s), untreated
  • 1 kg sugar

I brought the recipe for fir shoots back from a vacation in Switzerland. If you like honey, you’ll love it. Bring the fir shoots to a boil with water and three lemon slices, cover, and let steep for 30 minutes. Then strain through cheesecloth. Pour the resulting liquid into a saucepan, mix with the sugar, and simmer for about an hour and a half, depending on how runny you want it to be. Pour the thickened “honey” into small jars, seal tightly, and store in a cool, dark place. It will easily keep for over a year—if not licked up beforehand.
