Fish curry for little sweet tooths

Ingredients for 3 servings:

  • 4 carrots
  • 1 zucchini
  • 250 g mushrooms
  • 1 onion(s)
  • 2 fish fillets of your choice, e.g. cod
  • 1 tsp curry paste, yellow
  • 1 can coconut milk

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

First, finely grate the vegetables and onions. Depending on how well your children can chew, you can of course make it coarser or finer. I grated everything on the coarse side of the grater. Heat the coconut milk solids in a pan until it becomes liquid and creamy. Then add the curry paste (the yellow one isn’t as spicy, but still use it carefully and according to your taste) and spread it out. Then add the vegetables to the pan and sauté, adding a little salt. Reduce the heat and continue cooking on low. I placed the fish whole on top and then put the lid on. Let it simmer for 5-10 minutes, until everything is soft and cooked through.
