Ingredients for 4 servings:
- 4 cod fillet(s), zander, plaice fillet or your choice
- 2 eggs
- 2 tbsp milk
- 4 tbsp dill, parsley, chives
- salt and pepper
- Flour
- Fat
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
First, season the washed fish fillets with salt and pepper. Then, whisk the eggs with a fork, then add the milk and finely chopped herbs. Coat the fish fillets in flour, pat dry, then add the fish fillets to the herb and egg mixture, and turn over. Then, place the fillets in a pan with hot fat. A good nonstick pan is even better, as this requires virtually no fat. Pour any remaining egg mixture over all the fillets, turn them over about once or twice, and fry until crispy in about 7-10 minutes, depending on the fish (cod, for example, is thicker than plaice fillets). Serve with either potato salad, mashed potatoes, or fried potatoes.
