Fish: Fried Tuna

Ingredients
 

  • 850 g Tuna sushi quality
  • 100 ml Sesame oil
  • 2 tbsp Soy sauce
  • 1 tbsp Worcester sauce
  • 1 glass Capers
  • Sea salt from the mill
  • Tellicherry pepper
  • 1 Msp Hot pepper de la Vera
  • 1 Red chilli pepper
  • Black sesame

Instructions
 

  • Our fishmonger had a tail piece of tuna on sale, it was a good 850g, I couldn't miss that. Wash and dry the tuna and cut into 2 cm thick slices.
  • For the marinade, mix the sesame oil, Worchester sauce, soy sauce with salt and pepper in a bowl, add the capers and the liquid and distribute well. Pierce the chilli pepper several times with a fork and add to the marinade. Put in the tuna, close the bowl with a lid and swirl it several times.
  • Then let stand for 1 hour and turn over and marinate for another hour. Heat some sesame oil in a pan and take the tuna steaks out of the marinade (strip off capers before frying) and fry in the hot oil on the first side for 2 minutes, turn and switch off the pan.
  • Add the capers and marinade and sprinkle the tuna with sesame seeds and leave in the pan for another 2 minutes. Then serve immediately. We had melted tomatoes and two kinds of bruscetta with it. I wish you a good appetite.
