Fish: Halibut with Red-green Rice

The perfect fish: halibut with red-green rice recipe with a picture and simple step-by-step instructions.

  • 2 Halibut steaks
  • 2 Tl Wild garlic pesto, own production
  • 1 Lemon fresh
  • 3 Tl Ajvar
  • 1 handful Wild garlic or more to taste
  • 4 Pinches Salt for the fish
  • 1,5 Tl Vegetable broth
  • 1 Cup Rice
  • Flour for flouring the fish
  1. First put water on for the rice. I always use vegetable broth instead of salt. When the water boils, add the rice to the water and let it cook. Depending on the variety, it takes about 20 minutes to cook.
  2. Wash the fish, pat dry, season with salt and add a little lemon juice. Now spread the wild garlic pesto on the fish. This works very well with a brush. Let it move in first.
  3. Cut the wild garlic very finely and add it to the rice just before the end of the cooking time, as does ajvar. Season to taste and possibly add a little lemon juice.
  4. Now lightly flour the fish and fry on both sides in a pan with hot oil or butter, then continue to fry gently for a little while. The fish can still be glassy. Mine was done after about 3 minutes of frying time on each side.
  5. That’s it. Bear’s garlic must always be taken now. Tastes good and is healthy. Also not containing Vit-K, who has to pay attention to it.
